Do you love kale? Me neither, and I think anyone who says they do is lying. Oddly, I find myself eating kale several times a week in the form of this salad. It’s easy, pretty tasty, and every forkful makes me feel healthier.
This is truly our go-to salad. We serve it frequently at dinner parties and we eat it at home all the time. We get tons of compliments on it (I love to tell people how to make it, because the key is to “massage the kale” – what a strange sentence to utter). It also keeps for several days in the fridge (unlike most salads, which are pretty worthless even a few hours later). Yum!
Massaged Kale Salad
1 bunch kale
2 tablespoons grated parmesan
2 tablespoons olive oil
Chop the kale into fine ribbons. Grate lemon zest over greens, then mix lemon juice with olive oil and salt and pepper to taste. Now the fun part – massage that dressing into the kale. Yeah, baby! Let sit for at least 20 minutes. Sprinkle with cheese and serve.
