We are approaching one of the most fun-tastic weekends of the year. Love sports? Hello Kentucky Derby! How about Mexican food? Hola, Cinco de Mayo! Family time? Let’s get a head start on Mother’s Day! Even if you hate all of those things (you crazy person), there is always the option of just hanging out in the yard and enjoying some beautiful spring weather.
And to go with all of these fun events? A festive mocktail, of course! I’ve been exploring new drink territory lately and I like it. I like it a whole lot. Even though I don’t drink alcohol (for health reasons, sadly – not for something exciting like a pregnancy), I believe I still deserve something exciting to sip for special occasions.
This drink is bright, minty, and lemony. It’s perfect for a party or a picnic or post-lawn mowing.
Cucumber Mint Slushie
Adapted from A House in the Hills
- 1 medium cucumber
- 2 cups ice
- 1/2 cup water
- 8 large mint leaves (basil is nice, too)
- 1 lime
- 2+ tablespoons honey, agave or other sweetener
Peel cucumber, rinse mint leaves and add to blender with ice, honey and juice from one lime.
Add water to achieve the consistency you like and blend until slushed.
