I’ve already written one post about my obsession with grilled bread. In my opinion, it’s the best thing since sliced bread. Lately one of my favorite light meals has been simply a bruschetta medley. It’s been so much fun to play around with what we’ve got from the garden, the farmer’s market, and any leftovers lurking in the fridge. The only thing I ever have to make sure I’ve got is some good bread – any rustic loaf will do. This week we devoured 3 types: smoked salmon with ricotta and a squeeze of lemon, tomatoes and basil, and prosciutto, brie and fig jam. Paired with a crisp white wine (or some nice sparkling water), it’s my ideal meal.
I love these combinations, but I’m hungry for more! Is there any bruschetta recipe that folks would like to share?
