Food on Fridays: A lemon cookie for Labor Day

Labor Day often involves a picnic or a BBQ, so I thought I would post one of my favorite party dishes. This is actually a recipe from the Betty Crocker Cookie Book, but I have been making them for so long that I feel like they are mine. I’ve had lots of success with these cookies when I’ve taken them to parties, and I’ve given out the recipe more times than I can count. Someday I’d like to switch up the lemon for orange – leave me a comment if you do that, I’d love to hear how they turn out.

Lemon-Lime Cookies
Ingredients:
1 cup sugar
2/3 cup butter or shortening
1 tablespoon grated lemon peel
2 tablespoons lemon juice
2 teaspoons grated lime peel
1 tablespoon lime juice
1 egg
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Heat oven to 375. Beat “wet” ingredients (first 7) until combined. Stir in dry ingredients.  Drop dough by tablespoonfuls about 2 inches apart on an ungreased cookie sheet. Bake 11-13 minutes, or until edges are golden. Cool completely, then frost with Lemon-Lime Frosting.

Lemon-Lime Frosting
2 cups powdered sugar
2 tablespoons butter, softened
1 teaspoon grated lime peel
1 tablespoon lemon juice
2 teaspoons water

Mix all ingredients until smooth or spreadable.
