Food on Fridays: Haulin’ oats

Steel cut oatmeal is a winter-weather treat.

On this cold, wet Friday in February it seems there is little to like about winter. Snow-covered branches? Over it. Cozy sweaters? Been there, done that. But one winter staple that doesn’t grow old is a warm bowl of creamy, nutty steel cut oatmeal.

I had long shied away from steel cut oatmeal because it can take a long time to prepare. However, I recently discovered this nifty shortcut, which cuts cooking time down to 10 minutes. Here’s the recipe that we’ve grown to love in our household:

  • Add one cup steel cut oats to 4 cups boiling water.
  • Turn off the heat and let sit overnight.
  • In the morning cook for about 10 minutes, adding more water or milk if desired.
  • Mix in your favorite oatmeal additions. Ours include: brown sugar, salt, raisins, and peanut butter. We’ve also tried cinnamon, cardamom, cream, maple syrup, walnuts, and butter.
