Food on Fridays: Beyond the turkey sandwich — what to do with Thanksgiving leftovers

My favorite part of Thanksgiving has always been the day after. I love nothing more than a fridge full of leftovers. I like the standard turkey sandwich and the generic Thanksgiving mish-mash, but I’ve added a few new standards over the years.

Mashed potato pancakes are a great savory breakfast item and require nothing you don’t already have on hand. Just create patties, flour them a little, and fry them in some butter. They’re great with hot sauce or any other condiment of your choice.

Turkey hash is also great for anytime of the day. I believe most things can be improved by adding a fried egg on top, and this recipe is no exception. Plus, it will fuel you for a weekend of shopping at the sales! This recipe from epicurious is a favorite.

I get kind of tired of pumpkin pie, but this year I was still craving sugar. With my extra cranberries I decided to imitate my favorite cookie at Dolce. Cranberries, chocolate chips and butter are on sale at the Hen House right now, so I took the excuse to satisfy my sweet tooth and get a head start on my Christmas cookie giveaways.
